Christmas Is On Its Way Brine Chicken...

Yay.. Its almost Christmas and guess what i have the best Brine for your chicken, its pretty awesome.  You will need 1 Quart of buttermilk, 1 small onion or 1 cup of shallots, 2 tablespoons of fresh garlic, 2 tablespoons Kosher salt, 2 tablespoons sugar, 1 teaspoon cumin and 1 1/2 teaspoon black pepper.. whisk the buttermilk, onions or shallots, garlic, salt, sugar, cumin and black pepper until the salt and sugar dissolves. Rinse your Chicken under cold water ad pat completely try. place chicken in the the mixture and coat, cover and refrigerate for 24 hours... I promise you will do it again next year. My ribs were awesome had a nice early dinner and now maybe some ice cream will do. I have honestly been eating so much cake lately! Ugh too much. He he he he. Order Completed!

I have finished my cupcake order and they came out darling! I am so proud of myself, but tomorrow I will be making my simple but so delicious ribs!!! YUMI.. So all I do is marinate them with Adobo which you can find in the grocery store in the Spanish aisle, Garlic powder. pinch of salt and the best part SOFRITO! You can find that in Spanish stores. Sofrito is a green mixture of peppers, garlic, onions, Etc.  so you take  all of this boil everything together for about an hour and a half, until they are tender I suggest to put a tablespoon of vinegar in. Take them out and put them in the oven for another 30 minutes with BBQ sauce. Ahhhh perfection its great you should try it and tell me how it was.

Long Time..

OMG... So I haven't written for a while almost a week I have  been extremely busy with my Cupcake orders!! Please check them out on Face book.com email address you should look me up on is ericaathome@yahoo.com they have been coming out wonderful! The party last week was amazing had a wonderful time made meatballs with Basil and french bread.. So I put the meatball on the bread than place a piece of basil than a toothpick running right threw. I even put pesto on some of them YUMI!!! Tomorrow I will be posting my Christmas Cupcakes on Face book.. Make sure you check them out.

Easy simple way to impress..

Good morning everyone.. So I woke up on a hungry side but let me tell you that I made something that tastes wonderful. It is called eggs in a blanket, I know sounds weird but for those of you who like over easy eggs and bread this is an awesome treat. Take a piece of bread any kind whatever makes you happy. Take a cup make sure it is round or for those of you who love to cook I am sure you have a cookie cutter, So take a cup or a cookie cutter and make a whole in the middle of your bread. Take olive oil or butter and put into a pan, Place the bread on the pan and crack the egg into the center of your bread. Make sure your heat is on med/low this way you wont burn the egg or your bread. Once your egg looks the way you like it flip that baby over!  

After your egg is done on both sides you can now make a quick bacon side. The best is when you take bacon with sheers and cut into little pieces, for some reason it just taste better! LOL

A quick Bite!

Okay.. So it is late but here I go letting everyone in on one my dishes. First off I want to say that the Omlette I am about to tell you about is to die for. Ok my darlings if there is anyone out there listening. Some feed back please. 
Rule number one must have some Adobo it is a hispanic seasoning you can find it anywhere.  Make sure you look in the spanish aisle, Take 4 egg white only sprinkle some Adobo to taste not too much because than you will have some salty eggs. Get  any kind of table blend does not matter the brand, It has to say Table Blend, sprinkle some of that this does not have salt so do not worry add a splash of milk. Now put butter into the pan wisk the eggs and throw them in. Medium heat, cut up green onion and toss them on top of the eggs while they are still runny. When you feel its ready! flip your omlette, add anything you would like. My prefference Munster Cheese Yumi, Some turkey breast and spinach. Top with a dallop of sour cream! Now enjoy and tell me what you think.
